Is there anything better than carbs?
Give me all the bread and pasta. All of it. Now. And cheese. Because I really enjoy cheese. (And coffee. Because… well you moms out there know why…..)
I have been making these mini banana chocolate chip muffins for years now and have tweaked the recipe over time to make it perfect. My girls devour these whenever I make them. And when you have 3 kids loving the same food item you know you have a winner because that just doesn’t happen too much. Or around our house anyways.
Mini Banana Chocolate Chip Muffins
Preheat oven to 350 degrees.
Ingredients
- 1/3 c. melted butter
- 1/4 c. sugar
- 1/2 c. applesauce
- 1 egg
- 3 large mashed bananas
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 1/2c. flour
- 1/2 – 1c. chocolate chips
Mix melted butter, sugar and applesauce. Beat in egg. Add mashed bananas. Beaat dry ingredients and beat until just combined. Stir in chocolate chips. Scoop into greased muffin tins. Bake 10 – 15 minutes. Muffins are done when they spring up when you press on the top. Let cool for 5 minutes before removing from pan.
These freeze really well too. I freeze them in Ziploc bags and pull them out the day we want to eat some. A tip- use very ripe bananas. The more ripe they are, the better the flavor.
I substituted 1/2 c. applesauce for 1/2 c. sugar in this recipe. If you are looking for a sweeter banana muffin and not really caring about calories, then substitute sugar for the applesauce.
