Homemade Granola with Emmy
Hello friends!! Hope you all have been enjoying your summer thus far. Life has finally slowed down a little bit for us here in the last week which has been SO nice. The last few days I’ve been on a cleaning/organizing rampage. It feels GREAT to get rid of all the stuff that we accumulate over time. The 3 older girls have been with their grandma and grandpa the last few days which has given Emmy and me some one on one time. She has been in such a goofy mood the last few days- I’ve really enjoyed my time with her. Today she helped me make my homemade granola. This granola is so delicious- I always make sure to have it on hand now. I first came across this recipe from Arrows and Bow and made a little tweaking and this is what I came up with.

Emmy helped me mix everything together. She loves helping me bake! A good reminder that I need to try to do it more often with her.
If you don’t have flax seed on hand you can use some chopped almonds or whatever you like. That’s what I love about recipes like this- you can adjust it to your likes and dislikes!
Once it’s all mixed, dump onto a baking sheet lined with parchment paper.
Spread it out and pop in the oven.
My favorite way to eat this is with vanilla yogurt, some strawberries and a generous portion of this on top. It’s also good on it’s own as a little snack.
